EDEKA supermarket in Germany ensures food quality with testo Saveris Food Stores.

“We love food”, the motto of the EDEKA Frischemärkte (“fresh markets”) is well-known across Germany. In owner Sven Fiedler’s EDEKA market, this is more than just a name - it is lived passionately and with the help of first-class technology. Whether fresh food in the bistro, meat and bakery goods, fruit and vegetables or deep-frozen products – Sven Fiedler’s customers can rely on all foods being fresh, monitored and safe. In order to conduct the quality assurance processes in the market with the highest possible level of efficiency and transparency, Sven Fiedler and his team use the digital quality management system testo Saveris Food Stores.

The customer

Germany-wide, the EDEKA Group counts more than 11,200 markets, including the EDEKA Sven Fiedler e.K., founded in 2008. At a floor area of 3000 m2 and a product range of over 40,000 articles, the owner-managed EDEKA market is among the largest in Germany’s northernmost state, Schleswig-Holstein. Sven Fiedler’s EDEKA Frischemarkt additionally offers an online delivery service. Because service, proximity to the customer and the highest quality of products services offered determine the daily activities of Sven Fiedler and his team.

The challenge

The monitoring of the quality and freshness standards across all product groups in the extensive range of goods offered, proved to be a logistical challenge. From Incoming Goods, to the storage of cold chain-mandatory goods, up to food preparation and service, quality assurance has up to now involved a much too high requirement of time and staff resources. The measurement results have to be recorded manually and then collated on paper for the required comprehensive quality management. In the refrigerated areas in particular, hourly temperature checks can be required. Sven Fiedler comes to the conclusion that the urgently needed increase in efficiency can only be achieved without compromising quality using a fully digital complete solution.

The solution

In order to re-organize the work-intensive checks and to dispose with the piles of paper-based form sheets, Sven Fiedler decides to use testo Saveris Food Stores to deal with the future monitoring of quality-relevant parameters. With the complete solution from Testo, all measurement data from all product groups and departments are reliably and automatically transferred without interruption. The combination of intelligent sensors, intuitively operated software and an extensive and individual range of services, provides Sven Fiedler with maximum transparency and secure compliance in his food market. For the purposes of ensuring compliance, company regulations can be implemented using individual, digital checklists, with overall efficiency but without pen and paper. Working with testo Saveris Food Stores considerably reduces the time needed for quality tasks, minimizes sources of error and lowers costs. Sven Fiedler’s team can now be sure at all times that the quality standards are being adhered to.

In order to guarantee the uninterrupted, quality-relevant monitoring and documentation of the measurement points, Sven Fiedler uses the individually configurable measuring instruments from Testo.

Temperature checks

The testo Saveris Food Stores’ data loggers are installed in all refrigeration and deep-freeze units in the market. The loggers not only continuously ensure the right storage temperatures, but using door contact probes, the door opening and closing times are additionally recorded, in order to keep energy consumption at a minimum and to counteract doors’ being left open too long. In the event of limit value violations, an alarm is triggered immediately. This means all manual temperature checks in the refrigeration units over the course of the day are eliminated.
